Description

Some chopped red bell pepper gives great flavor to this old favorite of mine. Easy, tasty and homey!

Ingredients

  • 2 cups Turkey Or Chicken Stock
  • 2 quarts Water
  • 6 cubes Chicken Bouillon
  • ¼ teaspoons Onion Powder
  • ¼ teaspoons Garlic Powder
  • ¼ teaspoons Thyme
  • 2 whole Carrots, Sliced
  • 1 stalk Celery, Diced
  • ½ cups Red Bell Pepper, chopped
  • 2 cups Turkey, Cooked And Cubed
  • 1 cup Uncooked White Rice

Preparation

1. Combine turkey broth, water and bouillon cubes in a large pot, bring to boil.

2. When bouillon is dissolved, add onion powder, garlic powder and thyme.

3. Reduce heat to simmer, add carrots, celery and red bell pepper and cook for 10-15 minutes.

4. Add turkey cubes and rice, then cover for 30 minutes or until rice is cooked.

This is also good with brown rice, too!

This was delicious!! I made it tonight for dinner and added a lot more turkey (because I had so much leftover in the freezer) and it turned out chunky, tasty and satisfying!! Thanks for sharing!!

This is a very tasty soup and so easy to make. I made turkey stock for Thanksgiving this week and used the turkey meat for this soup. I only made a couple of changes and that was to use all stock and I left out the red bell pepper.
Will definitely makes this delicious soup again after Thanksgiving.
