Description

This is my most requested recipe. It can be made with turkey, chicken, beef or most any meat you’d like. It also freezes wonderfully, so I always freeze at least half in two-serving portions to have for later.

Ingredients

  • 2 pounds Ground Turkey
  • 4 Tablespoons Worcestershire Sauce, Divided
  • 3 Tablespoons Ground Cumin, Divided
  • 2 cans (15 Oz. Size) Black Beans, Drained
  • 2 cans (14 Oz. Size) Petite Diced Tomatoes, Not Drained
  • 2 Tablespoons Tomato Paste
  • 1 can (14 Oz. Size) Corn, Drained (optional)
  • 4 Tablespoons Hot Mexican Chili Powder
  • 1 Tablespoon Chipotle Chili Powder
  • 1 teaspoon Salt (or More To Taste)
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Sour Cream

Preparation

Brown turkey (or other meat) in a large heavy-bottomed pot with one tablespoon of Worcestershire sauce and one tablespoon of cumin until done. Add the black beans, tomatoes, tomato paste, and corn, if using.

Add all the rest of the spices. Stir well and simmer for 40 minutes, tasting after 20 minutes and adjusting spices if necessary. Skim foam/acid from the top after about 30 minutes.

Serve with shredded cheese and sour cream on the side. Enjoy!
