Description

So easy and quick that it is great for those busy and rainy days when you don’t have time to be in the kitchen.

Ingredients

  • 1 pound Hamburger
  • 1 whole Medium Onion, Diced
  • Salt To Taste
  • Pepper To Taste
  • Garlic Salt, to taste
  • 28 ounces, weight Canned Diced Tomatoes
  • 8-½ ounces, weight Canned Shoepeg Corn
  • 15 ounces, weight Canned Pinto Beans
  • 15 ounces, weight Canned Red Kidney Beans
  • 15 ounces, weight Canned Black Beans, Rinsed
  • 10 ounces, weight Rotel Tomatoes With Green Chilies
  • 1 package (1 Oz. Packet) Taco Mix
  • 1 package (1 Oz. Packet) Ranch Dip Mix
  • Tortilla Chips
  • Shredded Cheese
  • Sour Cream

Preparation

1. Brown hamburger with diced onion and season with salt, pepper and garlic salt in a large pot.

2. Add diced tomatoes and then fill can (either the large can, or both small cans, depending on the size used) with water and add to the pot.

3. Add kidney beans, pinto beans, black beans, shoepeg corn, Rotel tomatoes with green chilies, taco mix, and ranch dip mix.

4. Stir and allow to simmer for 20 minutes.

5. Serve with crushed tortilla chips, shredded cheese and a dollop of sour cream.

This is really an easy soup to make on a busy day. It is great the next day, too, and a little thicker. Enjoy!

I made this for the first time for my family last night and they loved it! We added fritos to the soup and that added a nice taste to it also. I had been wanted to try taco soup for a long time and finally got gutsy enough to do it and it will probably be a repeat at our house!
