Description

This recipe is so easy and fabulous. It’s the perfect pick-me-up on a long winter’s day.

Ingredients

  • 1 pound Ground Beef
  • 1 whole Small Onion
  • 1 package (about 1 Oz. Packet) Taco Seasoning
  • 1-½ cup Water
  • 1 can (15 Oz. Can) Mild Chili Beans
  • 1 can (15.25 Oz. Can) Whole Kernel Corn, Drained
  • 1 can (15 Oz. Can) White Shoepeg Corn, Drained
  • 1 can (15 Oz. Can) Black Beans, Drained And Rinsed
  • 1 can (14.5 Oz. Can) Fire Roasted Tomatoes
  • 1 can (10 Oz. Can) Tomatoes With Green Chiles, Such As Rotel
  • 1 can (4 Oz. Can) Green Chiles
  • 1 package (about 1 Oz. Packet) Zesty Ranch Dressing Mix
  • Pickled Jalapeños (optional)

Preparation

In a large pot, cook beef and onion over medium heat until meat is no longer pink; drain. Add taco seasoning and mix well. Stir in remaining ingredients. Simmer, uncovered, for at least 15 minutes.

This recipe is also wonderful with lots of toppings, such as diced tomatoes, lettuce, chopped green onions, sliced black olives, sliced black olives, sliced avocado, guacamole, shredded cheddar cheese, sour cream, tortilla strips or chips, hot sauce or salsa.

Had a craving for taco soup (which I had recently at bunco). Your recipe was so easy and I liked that it was quick and I didn’t have to cook it all day! Thanks for sharing!

mel15brk, I have been looking through many taco soup recipes, and yours caught my eye. We love lima beans, so I substituted those for the chili beans. I loved the rotel——it added just the right amount of spice we were looking for. I always increase the meat and onion to soup recipes, so it wasn’t that yours didn’t have enough.
In looking at the different recipes, it is interesting how some say don’t drain the veggies, and others say DO drain. I followed your directions. Thank you for posting your recipe. It was excellent.
