Description

Great and easy to make.

Ingredients

  • 1 pound Ground Beef
  • 1 can (15 Oz. Size) Whole Kernel Corn In Water
  • 1 can (15 Oz. Size) Hominy
  • 3 cans (15 Oz. Size) Chili Mex Pinto Beans
  • 1 can (14 1/2 Oz. Size) Diced Tomatoes With Green Chilies
  • 1 package (1 Oz. Packet) Taco Seasoning
  • 1 package (1 Oz. Packet) Hidden Valley Ranch Dressing Mix
  • 2 cups Water
  • Shredded Cheese, To Serve
  • Tortilla Chips, To Serve

Preparation

Saute ground beef in a 5 1/2-quart saucepan. Dump in remaining ingredients. Cook over medium heat until almost to a boil.

Serve with cheese and chips.

I just made this with a few variations. I cubed a large chicken breast and sauteed it in olive oil in place of the ground beef (because I ran out of ground beef in the freezer) You always think you have enough! I added one can of diced tomatoes and one can of diced tomatoes with jalapenos, one can of dark red kidney beans and one can of black beans along with the corn. It was really a super supper. It had just enough heat and we cooled it down with a dollop of sour cream. Crumbled in some corn chips and chow down! Thanks for sharing
