Description

This is GREAT for a cold day, and EASY to make. I know there are thousands of Taco Soup recipes in the world, but this is my own combination of a couple that I liked—and my family LOVES it!

Ingredients

  • 1 pound Ground Beef, Browned And Drained
  • 10 ounces, weight Rotel
  • 15 ounces, weight Canned Kidney Beans
  • 15 ounces, weight Canned Corn
  • 14-½ ounces, weight Canned Diced Tomatoes
  • 15 ounces, weight Canned Chili Beans
  • 1 package (1 Oz. Packet) Taco Seasoning
  • 1 package (1 Oz. Packet) Hidden Valley Ranch Dressing Mix

Preparation

In a large pot, mix everything together. Bring to a boil, then let simmer for 15-30 minutes.

You can add cheese, sour cream, and/or chips.

(At our house, we brown and drain hamburger meat 5-10 lbs at a time. Then we freeze it in 1-pound bagged portions. Yes, we freeze the already cooked, seasoned, and drained hamburger meat. Saves TONS of time, and you only have the clean up of browning hamburger meat every so often. That is the best trick a best friend has ever taught me!)

I made this soup for a PTA meeting and it was AWESOME! I had so many asking me for the recipe!! It was so easy, I made it the night before then the day of put it in the crockpot to simmer until time for the meeting!!! I used Hunt’s fire roasted tomatoes and oh wow was it good!!!
