Description

This cheesy taco soup is a staple at local tailgate & watch parties during football season.

Ingredients

  • 1 pound Lean Ground Beef
  • ½ whole Onion, Chopped
  • 1 can Beef Broth (15 Oz.)
  • 1 can Corn, Drained
  • 1 can Rotel, Undrained
  • 1 pound Velveeta, Cubed
  • 1 can Ranch Style Beans, Undrained
  • Fritos (optional)

Preparation

In a skillet, brown ground beef and onion. Drain.

In a medium sauce pan, add beef/onion, broth, corn, Rotel and Velveeta. Cook on medium heat, stirring occasionally until cheese is melted.

Add the beans last so that they don’t break up during the cheese melting/stirring process. Heat until it’s bubbly.

Serve over Frito’s.

We made this for dinner tonight. I couldn’t get ranch style beans at my grocery store, so I googled around a bit and decided to use chili style beans. The recipe was a bit spicy for us before I added the beans, so I rinsed them of the “chili” sauce before adding them to the soup. It could have been a bit thicker, but I think that’s just my personal preference! Other than that, a great recipe! Thanks! =)

What an easy, tasty recipe! The only change I made was to use the Extra Hot Rotel, as we like things pretty spicy. My family put this on the “make it again” list!
