Add all ingredients into a large soup pot and heat until all ingredients are heated through. When you are ready to serve, pour into serving bowls and add any garnishes you wish.
Garnishes:
Corn Chips
Sour cream (I use greek yogurt)
Cilantro
Diced Green onions
Cheese
*I use leftovers from baked chicken, or a rotisserie. You could quickly braise uncooked breasts in stock, cool and shred, and then add other ingredients.
