Description

Traditional stuffed pepper dish, turned into a soup.

Ingredients

  • 1 pound Ground Beef Or Turkey
  • 2 whole Green Peppers, Chopped Large
  • 1 whole Small Onion, Chopped
  • 2 cloves Garlic, Minced
  • ⅔ cups Brown Rice
  • 3-¼ cups Chicken Broth
  • 2 cans (8 Oz. Size) Tomato Sauce
  • 1 can (14.5 Oz. Size) Diced Tomatoes
  • ⅛ teaspoons Crushed Red Pepper Flakes, Or Up To Double The Amount For More Heat
  • Salt And Pepper, to taste
  • Fresh Chopped Parsley Or Basil, To Serve
  • Grated Parmesan Cheese To Serve

Preparation

In a large saucepan, brown the ground beef and drain off grease. Add peppers and onions to ground beef and cook over medium heat until onions start to become translucent. Then add in garlic and cook for one more minute.

Stir in all of the remaining ingredients, including salt and pepper to taste and bring soup to a boil. Reduce heat to low and let simmer for at least 45 minutes, making sure brown rice is cooked tender.

Serve up with some fresh chopped parsley or basil and a good helping of grated Parmesan cheese.

I added twice the rice and 2 cans of kidney beans for a extra fiber and protein. So. Dang. Delicious.

Loved it! Thanks so much for sharing :) I think it would be great with black beans, and maybe some corn too, I’m going to try that next time!

For a heartier soup add extra rice and kidney or black beans. Very very good and pretty easy.
