Delicious! This was so tasty! I used mild turkey Italian sausage instead of spicy, and spinach instead of kale. I also added a can of cannelini beans like someone suggested. Thank you!

We loved this! Be sure to make the potatoes smaller so it doesn’t take too long to cook. We like less potatoes, so I’ll just use 1-2 next time. We’ll also add more bacon.

I made this the other night for my blog (http://domestiphobia.net/2010/11/16/tuscan-soup-for-the-soul/) and it turned out fantastic! Perfect comfort food for fall/winter. It was pretty simple (which is important for me), and it tasted delicious. My husband loved it as well. Next time I’m not sure I’ll bother with the bacon – the sausage is flavorful enough, and I thought the bacon was kind of a strange texture.
Thanks for sharing this great recipe! I will definitely be making this again.

Made this for my boyfriend tonight and he loved it, even enjoyed the kale. I added some link sausage to the ground sausage and it was great. Thanks for sharing.

When my brother (who doesn’t cook) told me he made this and it was Very Good….I knew it would be not only good, but easy. I used half and half and onion powder as subs, worked just fine. Thanks for another great soup recipe.

I love that there is no tomato in it. Although I love tomato, I was ready for something different. I didn’t have any kale, but will definitely pick some up for next time. Used yellow onion instead of read and didn’t have the spicy sausage, so added red pepper flakes to the mild sausage. Love the cream in the broth. This is definitely a keeper. Thanks!

I have always loved the Olive Garden soup but this one is even better! Love, love, love. I did use more potatoes, onions, and cream than the recipe called for, I also added thyme, sage, and Italian seasoning. The soup was better the next day after the flavors melded and I can’t wait to eat the last bowl for lunch today (in fact, I had it for BREAKFAST the morning after I made it for dinner~it’s that good).

Delicious fast and easy! I had to skip the bacon but it was still very hearty and delicious. next time I am going to try it with italian seasoned ground turkey. Thank you for sharing!

Made this soup last night and it was incredible. I doubled the water and chicken bouillon and added more Kale. The whole family loved this. I served with fresh crusty bread and it was wonderful. This will go into my soup rotation for the fall/winter season.

This just might be my new favorite soup. I’ve never had it at the restaurant before, so I can’t compare it to that, but I can say that it was fantastic. I’ve never had kale before and was thrilled to find that it doesn’t have a very strong flavor. Thank you so much for sharing this. I’m sure it will be in heavy rotation in my menus this winter.

My jeans are fitting a wee bit too tight these days, so I made this soup with a few adjustments: ground turkey instead of breakfast sausage, no bacon, and half and half instead of heavy cream. I added sage, ground savory, and thyme to make up for the spiceyness left out from the meat substitution. And it still tasted great! Who knew kale could be so much fun? I will definitely make it again without the healthy substitutions once my jeans fit better.

This soup was really delicious and a nice change from our usuals. I subbed whole milk from cream thinking my husband would never know the difference, but at the dinner table he said, “It’s really good, but it’s missing something…cream maybe?” Busted. Next time I’ll use cream! Thanks!

this soup is delicious. my husband and I loved it the first time we had it. I almost think the leftovers were better than when it was fresh! generally by the time leftovers are gone I’m ready to not have that dish for a while, but I was sad when we’d finished this soup. I will definitely make this again.

Needed to make something quick the other night, had everything on hand and made this,,,,we loved it!! It will become one of our fav’s. We love kale in soup and have made some very different ones this winter.
I had never eaten it at Olive Garden so didn’t have anything to compare, but this is good. Glad I found this site,,,,LOVE IT.
