Description

Spicy tomato soup studded with sweet fresh lump crab!

Ingredients

  • 2 Tablespoons Olive Oil
  • 1  Yellow Onion (small, Diced)
  • 8 cups Fresh Tomatoes
  • 2  Red Bell Peppers, Chopped, Seeds Removed
  • 1 whole Jalapeno Pepper (or 2 If You Like It Really Spicy)
  • 3 cloves Garlic, Minced
  • 4 cups Water
  • ½ cups Cream
  • Kosher Salt To Taste
  • ½ pounds Fresh Lump Crab Meat
  • Fresh Herbs And Mustard Seeds, For Garnish

Preparation

1. In a large heavy pot, add the olive oil and the onion and sweat for 5 minutes over medium heat.
2. Add the tomatoes, red peppers, jalapeno peppers (1 for a little heat, 2 for a lot of heat!), and garlic. Stir to combine.
3. Add the water and simmer with the lid on for 20 minutes over low heat.
4. Puree the soup on high until smooth, working in batches if you need to.
5. Return the soup to the pot and reheat. Gently stir in the cream and then season to taste with the salt.
6. Dish up the soup and top with a clump of fresh crab meat and garnish with a little fresh herbs and a tiny sprinkle of mustard seeds.

Delicious, I chopped the tomatoes, peppers, and jalapeño in the food processor prior to cooking then used an immersion blender to smooth it all out at the end.
