Description

Craving a big cozy bowl of spicy chili? Don’t want to spend hours slaving over the stove? This is the one you want.

Ingredients

  • 3 slices Bacon
  • 1 whole Medium Onion, Chopped
  • 1 whole Bell Pepper (any Color), Chopped
  • 1 whole Jalapeno, Diced
  • 1 pound Ground Beef
  • 1 teaspoon Sugar
  • 1 teaspoon Chili Powder
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Cumin
  • ½ teaspoons Black Pepper
  • Kosher Salt To Taste
  • 1 can (15 Oz. Size) Tomato Sauce
  • 1 can (15 Oz. Size) Black Beans
  • FOR THE OPTIONAL TOPPINGS:
  • Sour Cream
  • Shredded Cheese
  • Green Onions, Chopped
  • Ripe Avocado

Preparation

Heat a Dutch oven over medium high heat. While pot is heating, slice the bacon crosswise into small pieces. When the pot is hot, add the bacon (you should hear it sizzle when it hits the pot) and cook until crispy.

Add chopped onion, bell pepper, and jalapeño. Sauté until the vegetables are soft and translucent, about 5 minutes. Add ground beef and cook until brown. Stir in sugar, chili powder, dried oregano, cumin, black pepper, salt, tomato sauce, and black beans. Simmer on stovetop, uncovered, for 20 minutes.

Top with shredded cheddar cheese, sour cream, sliced green onions, ripe avocado, and crackers if desired.

This makes 4 modest portions, or 2 very generous portions. Recipe can easily be doubled and leftovers keep well in the refrigerator or may be frozen.

This was really good! I loved the flavor the bacon gave to the dish and that it was a “chunky” chili. Perfect for a quick and easy weeknight meal. Can’t wait to make this again!

Loved this super quick recipe. The lack of ‘broth’ was perfect for Frito Pie! (Thick, hearty chili served over Frito Corn Chips, topped with cheese). I will definitely be making this again.
