Description

This chili will warm you up inside and maybe start a little fire thanks to the spicy chipotle peppers. You can make this as mild or spicy as you’d like, but you’ll love the warm smoky flavor the chipotles add.

Ingredients

  • 2 pounds Ground Beef
  • 1 whole Onion, Diced
  • 1 whole Green Pepper, Diced
  • 4 cloves Garlic, Minced
  • 28 ounces, fluid Diced Tomatoes, Undrained
  • 15 ounces, fluid Diced Tomatoes, Undrained
  • 8 ounces, fluid Tomato Sauce
  • 1 whole Chipotle Pepper, Finely Chopped (this Is One Pepper, Not One Can Of Peppers)
  • 2 teaspoons Ground Cumin
  • 3 teaspoons Chili Powder
  • 2 teaspoons Black Pepper
  • 2 teaspoons Salt
  • ½ cups Water (use Only If Your Chili Seems To Thick)
  • 30 ounces, fluid Kidney Beans, Rinsed And Drained
  • 30 ounces, fluid Chili Beans, Undrained

Preparation

In a large stock pot or Dutch oven, cook the ground beef, onion, green pepper and garlic until the meat is cooked through. Drain off any grease. Add the remaining ingredients except the beans and mix well. Bring to a boil, then reduce the heat and simmer 2 hours. Add the beans and heat through. Serve with cheese, sour cream, salsa, avocados, etc.
