Description

A soup for cold weather that brings memories of BBQing in the summer. Use leftover chicken to make this very easy soup.

Ingredients

  • 3 pieces Grilled Chicken Breasts Seasoned With Your Favorite BBQ Sauce, Chopped
  • 1 whole Yellow Pepper, Chopped
  • 1 whole Orange Pepper, Chopped
  • ½ teaspoons Fine Sea Salt
  • 6 cups Chicken Broth
  • 1 cup BBQ Sauce
  • 1 cup Fresh Cilantro, Roughly Chopped
  • 3 cloves Garlic, Minced
  • 2 cans (15 Oz. Size) Black Beans
  • 2 cans (11 Oz. Size) Mexican Corn (Corn With Peppers)

Preparation

Combine all of the ingredients in your slow cooker. Cook for 5-6 hours on low or 2 1/2 to 3 hours on high, until the veggies have softened.

Optional: serve with sour cream and cheddar cheese.
