Description

Tasty, simple and just a little bit naughty.

Ingredients

  • 4 bunches Washed Or Ready To Eat Spinach
  • 6 strips Thinly Sliced Bacon
  • 4 cloves Garlic
  • 4 stalks Cilantro (Coriander)
  • 1 stalk Celery
  • 2 slices White Bread Without The Crust
  • 1 cube Chicken Bouillon
  • 1 Tablespoon Butter
  • Sal And Pepper To Taste
  • 5 Tablespoons Fresh Cream, To Serve

Preparation

Cook the spinach leaves in a little water, with a pinch of salt and just enough water to cover the spinach. Set it aside.

Chop the bacon into tiny pieces, and cook it with a little oil or butter until crisp.

In a blender or food processor, place the garlic, cilantro, celery, bread and the cooked spinach along with the cooking liquid. Mix until all the ingredients are incorporated.

In a deep pot, place the bacon and a drizzle of the cooking oil. Add the blended mix by sifting it through a colander. Let it cook for a couple of minutes. Add 4-5 cups of water, the bouillon and the butter. Mix well and let it simmer for a couple more minutes. At this point you should taste it. If it feels too bland, you can add a bit more bouillon, or simply add salt and pepper to taste. And it is done!

Serve with a tablespoon of cream on each plate. You can also serve it with croutons if are not very carb conscious.
