Description

This soup is really simple to make, is packed full of flavor, and goes perfect with a lobster tail. Serve with Ree Drummond’s “The Bread” to make it a perfect dinner.

Ingredients

  • 2 Tablespoons Olive Oil
  • 1 cup Yellow Onion, Diced
  • 4 cloves Garlic, Minced
  • 2 whole Carrots, Peeled, And Cubed
  • 5 whole Russet Potatoes, Peeled And Cubed
  • 2 cups Leftover Grilled Steak, Diced
  • 1 teaspoon Salt
  • 1 teaspoon Cracked Black Pepper
  • ½ cups Tomato Sauce
  • 1 teaspoon Worcestershire Sauce
  • 4 cups Beef Stock
  • ½ loaves Ree Drummond's "The Bread"

Preparation

Begin by heating a soup pot on medium heat. Add the olive oil, and toss in the onion and garlic. Sauté until the onion is nice and tender. Toss in the carrots and potatoes, mix, and cook for a few more minutes. Toss in the steak, salt, pepper, tomato and Worcestershire sauce, and mix well. Cook for a few more minutes.

Add the stock, mix, bring to a boil, then cover, reduce the heat to a simmer and cook for about one hour. Stir, and serve in your favorite soup bowls. I served this with a half loaf of Ree Drummond’s bread, as it was one of those days.

The simple splash of Worcestershire sauce,and the tenderness of all of the vegetables really made this a perfect soup.

A delicious way to use leftover steak!

Unbelievable! I agree, who ever has left over steak? Except for when the husband overcooks 4 really good cuts of NY Strip!!! I didn’t want to throw it away and figured a soup would be perfect. I searched for a recipe and came up with this one – OH MAN what a HIT! My 18month old, my 5 year old and me and my husband couldn’t get enough. My 5 year old even requested that I make it for dinner at least 4 nights a week – HA! It’s not often we have leftover steak, but if you ever do, definitely reach for this recipe. Simple and delicious! In fact, cook extra steak so that you CAN make this the next night. I used the roasted potatoes we had along with the steak from the night before and just added them in the last 10 min. of cook time to let them heat through but not mush. L-O-V-E-D it!!!! I simmered the soup until there was almost no liquid left so it was FULL of flavour and then I topped it with a dollop of sour cream and a sprinkle of chives. This is going in my “keeper” file. Thank you for the recipe! :)

Delicious! My dad said Dinty Moore didn’t have anything on me! That’s quite the compliment from him! I made extra steaks for supper the other night so that I would have leftovers to try this with. I tried a new marinade on the steaks, and I didn’t like it. So, I was a little leery that the flavor would bleed over and I wouldn’t be happy with the soup, but that didn’t happen! This soup is delicious and a great way to use up leftover steaks that no one around here EVER eats–they say leftover steak is dry and gross! I didn’t have fresh garlic, or even jarred minced garlic, so I used 1/2 tsp. garlic powder instead. I also used a couple handfuls of baby carrots rather than the standard ones. I only had 2 russet potatoes, so I used those and 4 red potatoes, amd I left the skin on.
