Description

Super easy, super healthy—packed with vitamins A, C, K, Potassium, Calcium and Iron. With winter heading our way, we can all use a good dose of that!

Ingredients

  • 2 Tablespoons Extra Virgin Olive Oil
  • 1 pound Pre-Cooked Chicken Sausage Links, Sliced
  • 1 whole Medium Onion, Chopped
  • 1 clove Garlic, Chopped
  • 4 cups Broccoli Rabe, Chopped ( Greens Included)
  • 8 cups Chicken Stock
  • 2 teaspoons Salt
  • ½ teaspoons Ground Pepper
  • ½ teaspoons Red Pepper Flakes
  • 2 cups Ricotta Cavetelli (I Buy It Frozen)
  • ¼ cups Parmigiano-Reggiano, Grated, For Garnish

Preparation

In a medium size Dutch oven over medium high heat add olive oil. Once oil is hot add the sliced sausage, onion and garlic and saute until soft (about 5 minutes). Add the chopped broccoli rabe with greens. Cook and saute until they begin to wilt.

Add the chicken stock, salt, pepper and red pepper flakes. Raise heat and bring to a boil. Add the frozen ricotta cavatelli.

Continue to boil for 6 minutes. Turn off heat and serve with cheese.
