Description

A hearty lentil soup filled with fresh herbs and plenty of vegetables! Check out related link for the original blog post.

Ingredients

  • 2 Tablespoons Olive Oil
  • ¾ pounds Hot Italian Sausage (I Used Turkey Sausage)
  • 1 whole Onion, Chopped
  • 4 whole Garlic Cloves, Chopped
  • 1 cup Celery, Chopped
  • 1 whole Green Bell Pepper, Chopped
  • 2 cups Fresh Spinach, Chopped
  • 1 pound Dried Lentils, Rinsed
  • 1 can (28 Oz. Can) Diced Tomatoes
  • 2 Tablespoons Fresh Basil, Chopped (don’t Substitute The Fresh Herbs For Dried In This Soup)
  • 1 Tablespoon Fresh Rosemary, Chopped
  • 1 Tablespoon Fresh Oregano, Chopped
  • 4 cubes Beef Bouillon, I Used The Extra Large Size
  • 10 cups Water

Preparation

Heat the olive oil in a large soup pot over medium high heat. Cook the turkey sausage for a few minutes.

Then add the onion, garlic, and celery and cook for 5 more minutes or until sausage is fully cooked and vegetables have slightly softened.

Add the remaining ingredients and bring the soup to a boil. Cover and reduce heat to a simmer. Cook for 25 – 30 minutes or until lentils are tender.

AMAZING! and easy! I didn’t add the green pepper. but you really do need the fresh herbs….so so good!

Great recipe! For the sausage, Original Brat Hans makes a great chicken sausage and their meat is all natural with no antibiotics, preservatives, fillers or MSG!

Soul-warming, hearty and flavorful soup! It was rainy and cold all day and this was the perfect antidote to a dreary day. The herbs give it more depth than a typical lentil soup. I used homemade stock instead of bouillon and it worked great. This recipe makes a huge pot of soup so I froze some.
