Description

What a great blend of sweet and spicy with the substance of a “man” meal!

The spice of the sausage, the sweetness of the whole corn and creamed corn, along with the red potatoes make this dish delicious!

For a festive kick, add a can of fiesta corn with red peppers.

This is great served with cheese quesadillas or corn bread.

Ingredients

  • 1 pound Spicy Sausage
  • 4 whole Red Potatoes
  • 2 cans (15 Oz. Can) Chicken Broth
  • 1 can (15 Oz. Can) Whole Kernel White Corn
  • 1 can (15 Oz. Can) Creamy Style Corn
  • 1 can (12 Oz. Can) Evaporated Milk

Preparation

Brown sausage in a skillet and drain grease.

While sausage is browning, peel and cut potatoes into bite-sized pieces. Place in a large Dutch Oven and pour chicken broth on the potatoes. Bring potatoes to a boil, simmering for 10 minutes.

Drain the whole kernel corn. Then add sausage and canned corn to the potatoes. Cover and let the soup simmer for 20 minutes. Add evaporated milk about 10 minutes prior to serving. Enjoy!

This is delicious! I made it today with regular mild sausage b/c my soup eating family is wimpy. The sausage paired with the sweet corn taste is perfect. Quick and yummy.

This recipe was fantastic and SO SIMPLE! I added some roasted red pepper and some cheese. Oh my goodness: AMAZING. I ended up eating some for breakfast the next morning!
