Description

An easy, delicious stew that is based off a Portuguese classic. This is a very versatile dish; you can use almost any sausage or green. Enjoy!

Ingredients

  • 2 Tablespoons Olive Oil
  • 2 cloves Garlic, Minced
  • 1 whole Yellow Onion, Diced
  • 8 ounces, weight Italian Sausage, Chopped
  • 1 can (14.5 Oz. Can) Diced Tomatoes
  • 1 can (15 Oz. Can) White Beans (rinsed)
  • 32 ounces, fluid Chicken Broth
  • 3 dashes Salt, Pepper, & Crushed Red Pepper (to Taste)
  • 6 cups Kale, Chopped (spinach & Mustard Greens Are Good Substitutes)

Preparation

Saute the garlic and onion in the olive oil until soft and fragrant.

Add sausage and cook until browned and heated through.

Add tomatoes, beans, broth, and seasonings.

Bring to a boil and start adding kale one small bunch a time.

The kale will begin to wilt down and you can keep adding more until it’s all in.

Turn heat down and simmer for about 15 – 20 minutes.

Serve with grated asiago or parmesan and crusty bread. ENJOY!

This was very easy and filling. Also, since I just cook for one person, I had soup for the whole week which was great!

I was thinking about posting a recipe almost exactly like this! I’d adapted it from a sausage, potato and kale stew recipe so I thought I’d made it up. Just want people to know it’s delicious! Maybe I’ll still do the potato one, it’s a bit different.

My whole family loved this recipe. I used kale and made no changes to it. The flavor was wonderful but when you add a little bit of crushed red pepper, that took it over the top. I will have to make a double batch next time. Thanks!!
