Roasted Butternut & Apple Stew

Recipe Description
A hearty stew perfect for a cozy fall or winter night.
Preparation Instructions
1. Preheat oven to 425ºF.
2. Peel and cube the squash and apples. Place them on a baking sheet and toss with olive oil, salt and pepper.
3. Roast in the oven for 15 minutes.
4. In a stock pot, sauté the garlic and onions in the butter until soft.
5. Add the squash, apples, vegetable stock, and cider to the stock pot with the onion and garlic and simmer over low heat until hot (1 hour suggested).
6. Enjoy.
Ingredients
- 1 whole Butternut Squash, Peeled And Diced
- 1 whole Sweet Apple, Peeled And Diced.
- 2 Tablespoons Olive Oil
- 2 Tablespoons Salt
- 2 Tablespoons Pepper
- 3 cloves Garlic, Minced
- 1 whole Yellow Onion, Chopped
- 2 Tablespoons Butter
- 2 cups Vegetable Stock
- 1 cup Apple Cider
