Description

You get a blast of healthy from this delicious soup!

Ingredients

  • 1 Tablespoon Olive Oil
  • 1 cup Onion, Diced
  • 4 cloves Garlic, Minced
  • 60 ounces, fluid Vegetable Or Chicken Stock
  • 14 ounces, weight Canned Diced Tomatoes
  • 1 teaspoon Rubbed Dalmatian Sage
  • 1 teaspoon Thyme
  • Salt And Pepper, to taste
  • 14 ounces, weight Canned White Beans, Drained And Rinsed
  • 4 cups Kale, Chopped
  • 1 cup Cooked Quinoa

Preparation

Heat the olive oil in a large pot and saute the onion and garlic until translucent. Add the chicken stock, tomatoes, sage, thyme and salt and pepper. Simmer for 20 minutes.

Add the white beans and kale and simmer for 5 minutes. Add the cooked quinoa and heat through. Adjust seasonings and serve.
