Description

A New Year’s Day tradition in Italy, lentils are thought to resemble coins bringing good fortune in the New Year. This is a simple yet savory recipe that pairs well with a side salad.

Ingredients

  • 8 cups Water
  • 2 cups Red Lentils
  • 6  Baby Carrots
  • 1  (Large) Garlic
  • 1 teaspoon Sea Salt
  • Pepper To Taste
  • Extra Virgin Olive Oil For Drizzling

Preparation

Bring water to a boil in a pot with remaining ingredients. Allow to gently boil at medium heat for 15–20 minutes. Remove garlic and carrots.

Serve with a drizzle of extra virgin olive oil.

Note: Unlike other beans, lentils do not need to be soaked before cooking, making them a quick and easy nutrient-rich addition to your kitchen.

First, I do not believe the directions for this soup are complete. You NEED to rinse the lentils. I usually do- because recipes instruct to do so- but went ahead with this recipe as directed and got a nasty scum onto of the soup that had to be spooned off. Also, to get something that resembles the picture you would have to blend it. Even then its hard for me to believe the picture is actually of THIS soup because mine was nowhere near this color.
My second issue- it just does NOT taste good. One of the blandest, most un-flavorful soups I have ever had.
I love red lentil soups and was really excited to find a very simple, quick recipe to make one. Unfortunately it was a big disappointment and I will never make this again.
