Description

A quick, easy, and healthy soup to get your kids involved in the kitchen. Make memories at mealtime.

Ingredients

  • 15 ounces, weight Jar Or Can Of Pizza Sauce (any Small One Will Do)
  • 4 cups Low Sodium Chicken Broth
  • ½ teaspoons Oregano
  • ¼ teaspoons Garlic Powder
  • 2 cups Chopped Fresh Greens (kale, Chard, Spinach), Tough Stems Removed
  • 1 cup Diced Carrot (about 1 Large)
  • 2 ounces, weight Quartered Pepperoni Slices, Cooked Sausage, Or Ham
  • ¼ cups Uncooked Quinoa, Rinsed
  • 1 cup Freshly Shredded Parmesan Or Pecorino-Romano Cheese

Preparation

Combine all ingredients (except for cheese) into a medium saucepan and bring to a low boil. Reduce heat to low and simmer for 15 minutes until the quinoa is cooked and the carrots are tender.

Ladle into bowls and top with a few pinches of shredded cheese.

Serves about 4 adults or 6-8 small children.

Nat’s Notes:
1. Try to use uncured meat, if possible.
2. If you don’t have pizza sauce, substitute a large can of tomato sauce (15 oz. or so) and a teaspoon of Italian seasoning.
