Description

Potato corn chowder made with pumpkin puree and smoked sausage.

Ingredients

  • 2 Tablespoons Butter
  • ½ cups Chopped Onion
  • 2 cans Pumpkin Puree (15 Oz. Each)
  • 6 cups Chicken Broth
  • 1 cup Milk
  • 1 Tablespoon Pepper
  • 1 can Corn, (15 Oz. Can)
  • 2 cups Cooked, Cubed Potatoes
  • ½ cups Cooked Macaroni Noodles
  • 2 cups Smoked Sausage, Sliced (For 2 Cups I Used Most Of A 9 Oz. Pkg)

Preparation

In a large saucepan, melt the butter over medium heat. Once melted add the onion and saute until soft. Add the pumpkin, chicken broth, milk, and pepper. Slowly heat until it starts to boil. Turn down the heat to low. Add the corn, potato, noodles and sausage and cook for at least 30 minutes or until heated through.
