Description

Do not underestimate the deliciousness of this simple tuber. Potato soup made with simple ingredients, following a few simple steps, makes a simply fabulous meal. It’s deceptively creamy while leaving out the fat.

Ingredients

  • ½ whole Onion, Diced
  • 3 cloves Garlic, Chopped
  • 1 Tablespoon Olive Oil
  • 5 whole Golden Potatoes, Peeled And Cut Into Medium Cubes
  • 2 cups Chicken Broth
  • 1 teaspoon Herbes De Provence -- Rather Than Keeping Track Of All The Different Herbs, I'm Lazy So I Use This All-in-one Herb
  • 2 teaspoons Salt
  • 1 cup Sour Cream (fat-free Works Great)
  • 1 teaspoon Fresh Dill, Chopped

Preparation

This recipe will make 4 servings of soup, if you’re looking for a big-ol’-bowl for a main dish. Or it will make 6 smaller sized servings.

1. Saute chopped onions and garlic in olive oil.

2. Add potatoes, allow them to brown/cook for about 3-4 minutes.

3. Add chicken broth and then enough water to make sure that the potatoes are completely covered. Put the lid on and allow potatoes cook at a low boil for about 8-10 minutes (check them with a fork for doneness).

Reduce the heat to low once the potatoes are done.

4. Using an immersion blender CAREFULLY puree up the soup. Did I mention that you should be CAREFUL when you do this cuz its HOT!!!!

5. After it’s blended to your desired consistency (I like lumps in mine), add the dry herbs and salt. Simmer for about another 5 minutes, stirring periodically.

6. Just before serving, stir in the sour cream and chopped dill.

I serve mine with shredded white cheddar on top as a garnish.
