Description

My youngest son loves this soup like no other. When he’s sick, he wants it every time. So this is Max’s potato soup! Love you, luvbug.

Ingredients

  • 6 cups Cubed Potatoes
  • 2 cups Cubed Ham
  • 3 cups Chicken Broth
  • 2 cups Water
  • Salt And Pepper, to taste
  • 3 Tablespoons Butter
  • 1 Tablespoon Garlic
  • 1-½ cup Shredded Cheddar Cheese
  • 1 cup Heavy Cream
  • 1 cup Instant Potatoes

Preparation

Cube potatoes and ham, place in a pot with broth and water. Add salt and pepper to taste (we like a lot of both but you can adjust to your family’s preference). Cook for 1 hour on medium/high heat, then add butter and garlic. Cook about 2 more hours on medium heat then add cheese, cream, and instant potatoes. Cook another 15 minutes on medium/low heat, then serve.

Note. If you like thin soup, leave out the instant potatoes. We like it thick so I use them as thickener.

Also, I personally like fresh cut scallions in it, but my luvbug, not so much, so I usually just sprinkle some scallions in my bowl.

I love, love, love potato soup! Never have thought of using instant potatoes as a thickener! Will have to try! Great tip!
