Add potatoes, onion, carrots, paprika, pepper and salt into a large pot. Add water just enough to cover them. Boil for 15-20 minutes. Remove from heat and let it cool down a bit. Add lemon juice.
Using a vertical (immersion) blender, blend all ingredients together until the soup is smooth and creamy. Add more water if needed.
Dish the soup into serving bowls. Sprinkle on some caraway seeds and enjoy the abundance of flavors!
