Description

This is the best, easiest minestrone I have ever made. It is a huge crowd pleaser and it isn’t all that time consuming.

Ingredients

  • 2 Tablespoons Olive Oil
  • 1 whole Medium Onion, Chopped
  • 2 whole Medium Zucchini Chopped
  • 2 whole Medium Carrots, Peeled And Chopped
  • 1 pound Ground Beef, Browned
  • ½ cups Basil Pesto
  • 3 cloves Garlic, Minced
  • ½ cups Red Wine
  • 3 cans (14.5 Oz. Can) Italian Stewed Tomatoes
  • 1 can (15 Oz. Can) Red Kidney Beans, Drained
  • 1 can (15 Oz. Can) Van Camp Pork N' Beans
  • 1 Tablespoon Fresh Rosemary, Chopped
  • 1 Tablespoon Fresh Oregano, Chopped
  • 1 box (32 Oz. Box) Beef Broth
  • 2 cups Small Elbow Macaroni

Preparation

In a large pot, add olive oil, onion, and zucchini. Saute over medium heat until onion is translucent.

Add all ingredients except macaroni.

Turn heat to medium-low and simmer for 10 minutes.

Add macaroni and bring to boil until noodles are soft. Salt and pepper to taste.

Serve with a hearty bread and enjoy!

Note: This makes a lot of soup, and any leftovers can be dished out into single serving airtight containers and frozen!
