Description
A delicious soup for a crisp fall day!
Ingredients
- 8 slices Bacon
- 1 whole Onion, Chopped
- 16 ounces, fluid Canned Tomatoes
- 46 ounces, fluid Chicken Broth
- 2 whole Carrots, Grated
- 2 whole Potatoes, Baked And Grated
- 4 cups Monterey Jack Cheese, Grated
- Tortilla Chips, For Garnish
Preparation
Fry bacon. Remove bacon; brown onion in bacon fat.
Add tomatoes, chicken broth, carrots, and potatoes. Simmer for 2 hours.
In a bowl to serve, add tortilla chips, soup, grated cheese, and bacon pieces.
