Description

I can honestly say I have concocted many a tortilla soup recipe over the years, and this by far is my favorite! Not only is it my favorite, but it is the easiest to prepare!

Ingredients

  • 1 pound Raw Chicken Breasts
  • ¼ cups Butter
  • ½ cups Oil
  • 1 whole Small Chopped Onion
  • 4 whole Celery Ribs Diced
  • 3 whole Large Carrots, Sliced
  • 4 cloves Garlic, Minced
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Chili Powder
  • 1 teaspoon Salt
  • 1 can (10 Oz. Can) Ro*tel Tomatoes
  • ½ cups Flour
  • 1 can (14.5 Oz. Can) Diced Tomatoes
  • 4 cans (14 Oz. Can) Chicken Broth
  • 4 whole Chicken Bouillon Cubes
  • 1 cup Chopped Cilantro
  • Sour Cream, To Serve (optional)
  • Tortilla Chips, To Serve (optional)

Preparation

Heat butter and oil in a large soup pot. Add to the pot the onions, celery, carrots, garlic and chicken. Let that simmer on medium heat for 8 minutes. Next add cumin, chili powder, salt, Rotel, and flour. Stir well. Slowly add all the remaining ingredients and simmer on low for 1 hour. Stir every 10-15 minutes to prevent sticking, as the broth will become thicker as it cooks. Ladle in bowls and top with crushed tortilla chips and sour cream if so desired.
