Put your steamer basket into a large pot of water with about 6 cups of water. Bring the water to a boil.
Peel, wash and cut the carrots, 1/2 onion, celery and sweet potatoes into small pieces, put them into your steamer basket, put the lid on the pot and steam them for about 20 minutes.
Slice the remaining 1/2 onion and crush the garlic clove. Put them into a soup pot and cook them on medium heat in the olive oil. When the onion becomes see-through, add the entire pack of Trader Joe’s steamed lentils to the onion and garlic and let the mixture simmer for about 5 minutes on low heat.
Once the other veggies are steamed add these, plus the water they were steamed in (approximately 6 cups) to the lentil mix. Let the mixture cook an additional 5-10 minutes, or until all veggies are soft. * Puree ingredients using an immersion blender. Add salt to desired taste.
*Note: Before blending the veggies to make the puree, I scoop out most of the liquid and blend. I add some of the water back in, while blending, until I reach the consistency I desire. We tend to make our purees thicker for our toddlers to enjoy as well.
