Description

A kumara is what a sweet potato is called in New Zealand. This smooth and tasty soup is made with kumara and lentils.

Ingredients

  • 2 teaspoons Olive Oil
  • 1 whole Onion, Chopped
  • 2 cups Kumara, Chopped Into 2 Inch Chunks
  • 1 cup Red Lentils
  • 1 cube Vegetable Stock
  • 4 cups Water
  • 2 teaspoons Cumin

Preparation

Heat oil, add onion. Stir over medium heat until onion is soft. Add remaining ingredients. Bring to boil. Lower heat and simmer for 20 minutes or until kumara and lentils are soft. Blend mixture with an immersion blender, or in small batches in a blender.

Serve with a dollop of sour cream if desired.

As I thought it would be, this was delicious! I substituted the vegetable broth and water for one can of vegetable stock and two cups of water, and instead of two teaspoons of cumin I did one teaspoon of cumin and one teaspoon of curry powder. The combination of spices was perfect! Thanks for this recipe.
