Description

Extremely easy, delicious potato soup you can customize to your liking.

Ingredients

  • 8 cups Potatoes, Diced (red, Russet, Yellow All Work Fine)
  • 1 whole Onion, Diced (or 1 To 2 Tablespoons Onion Powder)
  • 48 ounces, fluid (3 Cans) Chicken Broth
  • ½ pounds Bacon (cooked Crisp, Then Crumbled)
  • 8 ounces, weight Philadelphia Cream Cheese (1 Brick Or Block)
  • 12 ounces, weight Cream Of Chicken Soup (1 Can)
  • 2 dashes Black Pepper, Or To Taste

Preparation

Place potatoes and onion into a soup pot and set aside.

Over medium heat, combine chicken broth, cream of chicken soup, and cream cheese and whisk until smooth. (If you are in a hurry, you can skip this step and just throw everything together in the soup pot and stir to make it smooth as it heats.)

Pour soup mixture in with the potatoes and onion and place the pot over high heat. Bring to a boil, stirring frequently. Season with black pepper to taste.

Reduce heat and simmer for about 20 minutes or until potatoes are tender.

While the soup is simmering, fry up about a half a package of bacon. Crumble and set aside. You can stir the bacon into the soup if you’d like and simmer it all together for flavor, or just crumble the bacon on top of the soup after it has been ladled into bowls.

If you choose peppered bacon, you can skip adding any extra black pepper.

Optional add-ins for a heartier soup include a cup of frozen sweet corn, 1 1/2 cups cooked brown or white rice, or 1 cup frozen peas.

I made this soup last night for our unseasonably cool weather. I used cream of celery soup because it’s what I had. I also diced bacon and fried it in the pot. I sauteed the onions and 1 c. diced carrots before adding the remaining ingredients. You do have to stir quite a bit to combine the soups and melt the cream cheese.(I also used the 1/3 less fat cream cheese.) Overall, it was a tasty soup!

This soup was so good! I added the peas and corn and we also topped it with sharp cheddar cheese! It was delicious and perfect for the cold cloudy day we had yesterday!

I have made this so many times now. It is may favorite recipe for creamy potato soup. Thank you for posting. The only problem I have is trying to find it in search for some reason the title doesn’t find it you have to hunt through each page. I printed it this time :)

Yum! This recipe is a new staple during the cold months in our house. For a complete meal I add cooked cubed or shredded chicken, frozen sweet corn and have shredded cheddar and bacon for garnish and a side salad. Myself, my husband, 3 teens and toddler all love it. Thank You “VeryMom”

I just made this and its awesome!!! I added a little garlic and put a couple pieces of bacon in it and kept plenty to sprinkle on top, along with some cheddar cheese and green onions. YUM!!

I made this tonight and it was awesome! I did add cheese and I also added just a small amount of sour cream after it was already cooked into the bowls. I also thought about adding some green onions but didn’t have any at the house. But, my husband and I both loved it. We will definitely make it again! Thanks for the recipe!
