Description

A perfect flavorful soup that takes minutes to whip up. A cold weather must.

Ingredients

  • 1 Tablespoon Olive Oil
  • 1 whole Small Onion, Chopped
  • 8 ounces, weight Ham Steak, Cubed
  • 1 bag Kale, Pre-cut (8 Ounce Bag)
  • 6 cups Chicken Stock
  • 15 ounces, weight Canned White Beans, Rinsed And Drained
  • 1 teaspoon Salt To Taste

Preparation

Heat the olive oil in a medium-sized stock pot over medium-high heat. Add the onion and ham and sauté until the ham is slightly browned and the onions are opaque. Add the kale and cook, stirring occasionally for 1 minute. Add the chicken stock and beans. Bring to a boil. Add salt to taste. Remove from heat and serve.

I’m always looking for yummy recipes that are quick and easy. I modified it slightly by adding some turkey smoked sausage that I needed to use up and a tsp of garlic powder. This one is definitely a keeper.
