Description

My four-year-old son Hudson describes this delicious soup as his “all-time favorite ever”. This is a nice departure from traditional chili with just the right amount of heat. It is my most-requested dinner item!

Ingredients

  • 1 pound Boneless Skinless Chicken Breast
  • 1 whole Medium Onion, Chopped
  • 1-½ teaspoon Garlic Powder
  • 1 Tablespoon Oil
  • 2 cans Great Northern Beans, Rinsed And Drained (15.5 Oz Each)
  • 2 cans Chicken Broth (14.5 Oz Each)
  • 2 cans Chopped Green Chiles (4 Oz Each)
  • 1 teaspoon Salt
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Dried Oregano
  • ½ teaspoons Pepper
  • ¼ teaspoons Cayenne Pepper
  • 1 cup Sour Cream
  • ½ cups Whipping Cream (not Cool Whip!)

Preparation

Cut the chicken into 1/2-inch cubes.

In a large saucepan, saute the chicken, onion and garlic powder in oil until chicken is no longer pink.

Add beans, broth, chilies and seasonings. Bring to a boil; reduce heat and simmer, uncovered for 30 minutes.

Remove from heat. Stir in sour cream and whipping cream.
