Description

These noodles are PERFECT for homemade chicken soup. They’re simple, tasy, and just like Grandma’s. Plus, there’s no need for a stinkin’ noodle maker.

Ingredients

  • 2 whole Eggs
  • 4 Tablespoons Heavy Cream (I Suppose You Could Use Half-and-half, Milk, Or Water - But Why?!)
  • ½ teaspoons Salt
  • 2 cups Flour (all-purpose Works Well)

Preparation

1. Beat eggs in a medium-sized bowl with a fork.
2. Stir in cream and salt.
3. Stir in flour until mixture can be worked with your hands.
4. Once mixed, divide dough in half.
5. Roll first half on a floured surface. (I like my noodles to be like my hips—thick. You can roll yours as thinly as you’d like.)
6. Once rolled, slice dough into strips with a pizza cutter and then cut strips to desired length. (You could get crazy with shapes here, but I haven’t done that. Yet.)
7. Repeat steps 5 to 6 with the second half of the dough.
8. Allow noodles to ‘dry’ on waxed paper for about 20 to 30 minutes (they won’t be totally dry, but dry enough).
9. Add noodles to hot broth/water and allow to cook for 10 to 15 minutes.
10. Enjoy the love you’ll get when you serve these yummy noodles!

Variations: I haven’t tried any yet. I’m a bit of a purist when it comes to my noodles. If you’re daring and try something crazy (flavors, shapes, etc.), please let me know!

My son and I made these for chicken soup, it turned out great. I will never use the store bought stuff again.
