Description

Go ahead with that mound of garlic. You’re sick already, no one is going to want to come near you anyway! Eat two bowls and call me in the morning.

Ingredients

  • 4 Tablespoons Pasture Butter, Divided
  • 1 Tablespoon Garlic, Minced
  • 1 pound Free Range, Organic Chicken Breast, Sliced Long Into Tenders For Quick Cooking
  • 2 teaspoons Celtic Sea Salt, Divided
  • 1 teaspoon Black Pepper, Divided
  • 1 whole Medium Yellow Onion, Diced
  • 4 stalks Celery, Diced
  • 1 cup Carrots, Diced
  • 2 Tablespoons Dried Oregano
  • 1 Tablespoon Dried Parsley
  • 1 teaspoon Dried Thyme
  • 1 pinch Sugar
  • 3 quarts Organic Low-sodium Chicken Broth
  • 1 cup Water
  • 16 ounces, weight Reames Homestyle Egg Noodles, In The Freezer Section

Preparation

1. In a large soup pot, melt 2 tablespoons butter and the garlic over medium heat. Saute one minute or until garlic is golden and fragrant.
2. Add chicken, 1 teaspoon salt and 1/2 teaspoon pepper. Cook until no longer pink through the center, about 8 minutes. Remove and set on a plate to cool.
3. Add the remaining 2 tablespoons butter and diced onions to pot and saute 5 minutes. Add diced celery and carrots, oregano and parsley, thyme and sugar; saute another 5 minutes.
4. Shred cooled chicken, add to the pot. Cook 2 minutes or until heated through.
5. Pour in the chicken broth, water, the rest of the salt and pepper. Turn the heat up to high and bring to a boil.
6. Turn heat to medium- low, add noodles and simmer for 20 minutes, stirring occasionally. After 20 minutes, remove from the burner or the noodles will become the size of your mattress! Add any more salt and pepper to taste.

Best served with grilled cheese made with sourdough bread and aged provolone cheese. Yum!

Note: to the review that made it too salty. Did you use low sodium chicken broth? If you used regular it will be too salty. That is why I always use lower sodium so I can add in to my taste. G ives me more control of the outcome.

This was a very good recipe! It was a smidge on the salty side for our taste, but, other than that it was a spot on wonderful recipe!

Hubby is sick, so I went looking for a chicken noodle soup recipe this morning. Found this one, had all the ingredients in the house and started it about 10am. I no sooner start cooking the chicken/garlic/butter mixture than I hear, “Mom, can I have some of the chicken?” Ugh, there went some of my chicken. LOL! Happily, I had more in the freezer. :) Soup is now finished, house smells amazing and hubby will have soup for dinner before he leaves for work tonight. Thank you for such an easy and great recipe!!!

This was a fantastic recipe!! The only reason I gave it 4 gloves instead of 5 is it was a little on the salty side. Other than that it was a fantastic tasting soup!

My mom usually makes our family Chicken Noodle Soup so I don’t get a chance to make it often. I searched the site and thought this recipe was the easiest as I had most ingredients on hand. My husband came through the kitchen and said the smell of the garlic and chicken made his senses “pop!” The soup was very delicious and it will be my go to recipe!
