Description

Tasty and yummy soup which warms you up in winter. It is good for lunch or dinner.

Ingredients

  • 2 Tablespoons Vegetable Oil
  • 2 cloves Crushed Garlic
  • 1 pound Boneless Chicken (boiled And Sliced)
  • 1 cup Sliced Onion
  • ½ cups Grated Carrot
  • ½ cups Green Peas (frozen)
  • ½ cups Red Bell Pepper, Thinly Sliced
  • 1 cup Chopped Cabbage
  • 1 teaspoon Ground Cumin Powder
  • ¼ teaspoons Ground Pepper
  • ¼ Tablespoons Ground Turmeric
  • ½ teaspoons Chili Powder
  • 3 cups Chicken Broth
  • 6-⅜ ounces, weight Noodles (asian Noodles)
  • 1 Tablespoon Soy Sauce
  • 4 cups Water
  • 1-⅞ ounces, weight Spinach (optional)
  • 1 whole Jalapeno, Thinly Sliced
  • 1 whole Tomato, Diced
  • 1 Tablespoon Lemon Juice
  • 1 teaspoon Crushed Ginger
  • 1 teaspoon Salt
  • 2 Tablespoons Chopped Cilantro
  • 2 Tablespoons Green Onion, Chopped

Preparation

Heat the oil over medium heat in a large soup pot. Add garlic and fry for a minute. Add chicken and fry until chicken is slightly golden (it’s already been cooked, you just want to brown it a bit). Add onion and fry 2 minutes. Add carrot, peas, red pepper, cabbage and salt. Cook for 3-4 minutes. Add cumin, ground pepper, turmeric and chili powder. Mix well. Then add chicken broth and bring to boil, add noodles, soy sauce, water. Bring to boil. Cook 5 minutes. Add spinach, jalapeño, tomato, lemon juice and ginger paste. Mix well. Garnish with cilantro and green onion. And you are ready to serve.
