Description

Here’s a recipe for healthier Spaghetti O’s that your kids will surely love.

Ingredients

  • 1 cup Onion, Chopped
  • 1 cup Celery, Chopped
  • 1 cup Carrots, Chopped
  • 2 Tablespoons Olive Oil
  • 4 cups Vegetable Broth, Preferably Homemade
  • 15 ounces, fluid Tomato Puree
  • 2 cups Ditalini Or Macaroni Pasta
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • ½ cups Parmesan Cheese

Preparation

In a large pot, cook veggies in olive oil until tender. Add broth and tomato puree and bring to a rolling boil. Add the pasta and cook until al dente. Season with salt and pepper.

Sprinkle Parmesan cheese on top before serving.
