Description

This is a hearty beef barley soup with a lot of flavor for a low price. I serve it with a loaf (or two) of fresh bread.

Ingredients

  • 2 pounds Ground Beef Chuck
  • 3  Carrots, Sliced Into Coins
  • 2  Medium White Potatoes, Diced
  • ¾ cups Barley
  • 1 cup Frozen Corn
  • 3 cups Beef Stock (Swanson's)
  • 1 cup Red Wine (cheap)
  • 4 cups Water
  • 1 Tablespoon Steak Sauce (A1)
  • 1 Tablespoon Ketchup
  • 2 Tablespoons Tomato Paste
  • 1 Tablespoon Italian Dressing Mix (Good Seasons)
  • ¼ teaspoons Dried Rosemary
  • ½ teaspoons Onion Powder
  • 1 teaspoon Garlic Powder

Preparation

Brown beef over medium heat. Once it’s browned, drain off the grease and place the beef in a large slow cooker.

Add carrots, potatoes, barley, and corn.

Combine all of the other ingredients in a small bowl and then pour it over the beef and vegetables.

Cook on low for 8 hours.
