Description

Rich and hearty main dish soup.

Ingredients

  • 2 pounds Broccoli Florets
  • 2 cans Low Sodium Chicken Broth, Divided
  • 1 package Onion Soup Mix
  • ½ pounds Swiss Cheese
  • ½ pounds Velveeta Cheese
  • 3 cups Milk
  • 1 pint Heavy Cream
  • 2 cups Cubed Ham
  • ½ teaspoons Freshly Ground Pepper

Preparation

Shred Swiss cheese and cube the Velveeta cheese. Set aside. Dice ham and set aside.

Bring one can of chicken broth to a boil. Add broccoli and cook until just tender. Remove broccoli and set aside.

Add second can of chicken broth and onion soup mix to pot and slowly melt cheeses in broth. Chop broccoli. When cheeses are melted, add the broccoli back to the pot and add milk and cream. Add pepper. Bring to serving temperature and add ham. May be thickened with cornstarch and water, if needed.
