Description

This is a quick, inexpensive, and very tasty soup that I make whenever I have leftover ham. I hope you like it!

Ingredients

  • 2 whole Large Russet Potatoes, Peeled And Cut Into 1/2" Cubes
  • 6 Tablespoons Butter, Divided Use
  • 1-½ bunch Scallions (white And Light Green Parts), Chopped
  • 4 cloves Garlic, Minced
  • 1-¼ cup Diced Ham
  • 3-½ cups Water
  • 2 Tablespoons Chicken Bouillon Granules
  • ½ teaspoons Black Pepper
  • 5 Tablespoons Flour
  • 2 cups Half-and-half
  • Salt And Pepper, to taste

  • OPTIONAL GARNISHES:
  • Freshly Grated Cheddar Cheese
  • Scallion Tops
  • Cooked Bacon Pieces

Preparation

Heat a Dutch oven over medium heat with 1 tablespoon of butter. When melted, add the scallions, garlic, and ham. Saute for 3 minutes. Add the potatoes, water, bouillon, and pepper. Cover and crank up the heat to medium-high and bring to a boil. When boiling, reduce the heat and simmer for 12 minutes or until the potatoes are tender.

While the potatoes are simmering, in a separate saucepan, melt the remaining 5 tablespoons of butter over medium heat. When melted, add the flour and whisk constantly for 1 minute. Slowly whisk in the half-and-half. Once the mixture comes to a simmer, cook for about 3 minutes, whisking often.

When the potatoes are tender, add the half-and-half mixture to the Dutch oven and stir. Allow the mixture to return to a simmer, then cook for 2 minutes longer. Taste for seasoning and adjust as needed. If the mixture is too thick, add a little water. If it is too thin, cook a few minutes longer.

Ladle the soup into a bowl and top with any optional garnishes such as freshly grated cheddar cheese, scallion tops, and cooked bacon pieces.

This is my favorite ham and potato soup. I just chicken broth instead of water. More ham if available. My husband loves it. Unfortunately, it won’t freeze well because of the cream and potatoes get mushy so eat it all NOW!!

This is a delicious soup. I’ve made it twice – the first time as written was wonderful. The second time I made it, it was as a request from my kids. However, I had no ham so used some ground pork sausage and had no half and half so used whole milk and it was still great. Excellent soup. Thanks so much for submitting the recipe

OMG! So creamy and so good. I made the soup early in the afternoon, then put it in my slow-cooker on keep warm. We had to be out of the house in the early evening and returned to hot, delicious soup. I used whole milk instead of half and half.

Simple, straight forward and has great taste and texture.
I liked the amount of all the ingredients, actually using two big baking potatoes.
I also used chicken broth, as I had it on hand.
This is a go to recipe that I will use over and over again!

I had some left over ham and made this soup. So, so good. Simple ingredients, everything I had on hand. I only used 4 spoons of flower and 1 bunch of green onions. It was delicious. Was very good the next day too with crusty french bread. Thanks for a great recipe.
