Description

This soup comes from my grandmother’s cookbook. It will not disappoint and it’s even better when you can use homemade noodles.

Ingredients

  • 3 pounds Chicken, Raw
  • 2 teaspoons Salt
  • 1 clove Garlic, Chopped
  • 15 whole Peppercorns
  • 2 quarts Water
  • 4 stalks Celery
  • 1 cup Carrots
  • 2 cubes Chicken Bouillon
  • 3 cups Homemade Noodles

Preparation

In large pot add the chicken, salt, garlic, peppercorns, water, celery, and carrots.

Cook on low-medium heat for 1 hour and 15 minutes.

Remove the chicken from the pot and place on a cutting board.

Remove the skin and cut chicken into pieces; place pieces of chicken back into the pot.

Add the bouillon cubes and turn the stove to medium heat.

Add the pasta and cook for another 10 minutes.

I just made this today for a house full of sick roommates. I didn’t make any homemade noodles, and used a box of fusilli pasta instead. Nevertheless, I have never seen a pot of soup disappear so quickly! The recipe said it was enough for 10, but it was just enough to feed three 23 year old boys.

This soup has so much body, depth, and flavor. It really expresses the idea that a recipe doesn’t need a more than a handful of ingredients to make a meal. Thanks for posting this recipe; I’ll be sure to be cooking another batch tomorrow. :)
