I made this soup after coming home from a long day at work. Not only was it so easy to make, but it was also very flavorful! It hit the spot!

Yummm! My family loved it. Even my teenagers! I think you meant 19 oz of tortellini. I bought a 19 oz pkg. and used it all. Our family does not like things spicy so I omitted the red pepper. REALLY GOOD! It will go into the dinner rotation.

WHOA. this is INCREDIBLE.
1. This is VERY easy. Very little effort. AND FAST!
2. This is VERY delicious. Husband and I hope to have this almost weekly. A regular meal, indeed.
3. AFFORDABLE!!! Very important.

The flavor was delicious, and it was so easy! 9 oz. of tortellini was perfect (to me). The spinach put it over the top, and then I did add probably about 1/3 cup of Marscapone cheese I had leftover from another recipe — that gave it just the slightest creamy consistency, which I loved. I think I will do that again next time I make this!

We really like the flavors of this soup, and it’s great to make after a long day at work because it’s so easy. Since my husband doesn’t consider it a meal without meat, I dice some pepperoni and throw it in with the tortellini.

I adjusted amount of broth slightly based on my containers, and only used 1 T of olive oil. Wonderfully warming, yummy soup. With my adjustments only 257 calories per 2 cup serving! Great for my eating habits!! I used half a 19 ounce package of tortellini and thought that was more than enough!

Made this for our office’s Thursday’s BYOBoS, Bring Your Own Bowl of Soup…..perfect! Easy to make, easy to transport to the office. Mighty tasty too!

I. Love. This. Recipe.
I make it all the time when I know we’re going to only have a short time to eat before going somewhere or I’m going to have a late night. I make it for crowds and everyone always loves it. This is officially one of my new secret recipes.
