Description

This chunky vegetable soup is one of my favorite fall meals. Full of garden vegetables and cheese, it is a hit with everyone who tries it! I have to print copies of the recipe when I serve it to guests.

Ingredients

  • ½ cups Chopped Green Pepper
  • ½ cups Chopped Onion
  • 1 cup Each Diced Potato, Celery, Cauliflower, Carrot And Broccoli
  • ¼ cups Butter Or Margarine
  • 3 cups Water
  • 3 whole Chicken Bouillon Cubes
  • 1 teaspoon Salt
  • ¼ teaspoons Pepper
  • ½ cups Flour
  • 2 cups Milk
  • 1 Tablespoon Minced Fresh Parsley
  • 3 cups Shredded Cheddar Cheese

Preparation

In a large pot, saute the green peppers, onions and celery in butter until tender. Add the remaining vegetables, water, bouillon, salt and pepper. Bring to a boil. Reduce heat, cover and simmer 20 minutes or until the vegetables are tender.

Combine flour and milk until smooth; stir into the pan. Bring to a boil and stir for 2 minutes. Add the parsley. Just before serving, stir in the cheese until melted.

Amazing! Soooo hearty and fall-tasting! I love soups, and this is the best veggie chowder i have ever tried. Going straight into my recipe box! Thanks so much for posting this recipe!

This was amazing. Agree that chopping was the most time consuming, but so worth the time. My kids liked it – tho, the comment I got from my 6 yo son – Mom, this looks really gross, but tastes really good :-) I was very pleased and will definitely be making this again!

I made this last weekend for my husband and some friends. Overall it was a success. It was easy to make. The thing that took the longest was chopping all the veggies. It was perfect for a cold, rainy day (which it was). I think next time I might add a little more salt and/or pepper. There will be a next time. I recommend this for sure. (probably would freeze well too)
