Description

This traditional Finnish salmon soup is creamy and hearty. It will warm you up and keep you going all day long! Plus it’s so easy to make!

Ingredients

  • ½ sticks Unsalted Butter
  • 1  Leek, Sliced (white And Light Green Parts Only)
  • 5 cups Fish Stock
  • 1  Carrot, Sliced
  • 1 pound Potatoes, Cubed
  • 1 pound Salmon Fillet, De-boned, De-skinned And Cut Into Small Chunks
  • 1 cup Heavy Cream
  • 1 cup Fresh Dill For Garnish, Finely Chopped
  • Salt And Pepper, to taste

Preparation

In a pot, melt butter. Add leek and cook until translucent, about 7 minutes.

Add stock, carrot and potatoes. Bring to a boil and cook for 10 minutes over medium heat.

Add the salmon pieces and cream. Cook for 5–7 minutes more, until it begins to boil. Turn off heat. Add dill and seasonings. Cover with lid and wait for another 10 minutes before serving.

This is delicious! I wanted to recreate this soup which I tasted on a layover in Helsinki airport, and this is as good as the restaurant version. I made it for my family the first time this month and they’ve already requested it as a weekly regular. I followed the directions exactly (with 1 tablespoon salt and 1/2 tablespoon pepper), and the potatoes and salmon were cooked to perfection. It was easy and quick. Only comment is that it’s not a very thick soup, but I don’t think it’s supposed to be…and perhaps could add a bit of flour? But the taste is wonderful.
