Description

This is a laughably easy recipe for Tortilla Soup. It can be made as spicy or mild as you want!

Ingredients

  • 16 ounces, weight Frontera Salsa
  • 4 cups (1 Large Can) Chicken Broth
  • 1 Tablespoon Vegetable Oil, Plus More For Frying Tortilla Strips
  • 6 whole Tortillas, Cut Into Strips
  • 1 cup Cheese (Chihuahua, Monterey Jack, Cheddar) (optional)
  • 1 whole Avocado (optional)
  • 1 whole Lime, Cut Into Wedges (optional)

Preparation

In large pot, heat 1 tablespoon oil over medium-high heat until hot. Add salsa and cook down to a paste (about 10 minutes). Add chicken broth, partially cover, and simmer over medium-low heat for about 45 minutes.

While this is cooking, fry the tortilla strips in oil, without crowding. The strips will stop sizzling when ready.

Garnish with fried tortillas, cheese, avocado, a lime wedge, or any other accoutrements (like leftover chicken!).
