Description

My mom makes this delicious soup when she needs something the entire family can eat. It can serve vegetarians and carnivores alike! Very easy, pretty healthy, and very delicious!!

Ingredients

  • 1 cup Carrots, Sliced
  • 1 cup Celery, Sliced
  • 1 cup Onions, Diced
  • 1 clove Garlic, Minced
  • 3 cans (14 Oz. Size) Broth, Vegetarian Or Chicken
  • 1 can Water
  • 1 can Rotel (10 Ounce Can, Original Or Mild Unless You Like It SPICY!)
  • 1 can (14 Oz. Size) Tomatoes, Small Diced, Or Substitute Tomato Sauce If You Don't Want So Many Tomato Pieces
  • 1 envelope McCormick's Taco Seasoning, 1 Ounce Packet
  • Broken Tortilla Strips
  • Garnishes And Additions (Shredded Chicken, Monterey Jack Cheese, Avocado, Cilantro, Lime...Whatever You Like!) (optional)

Preparation

1. Saute vegetables until soft. Add to a large pot.
2. Add garlic, broth, water, Rotel, tomatoes, and taco seasoning to pot.
3. Simmer over medium-high heat for 20 minutes.
4. Serve garnished with broken tortilla chips and other toppings such as Monterey Jack cheese, avocado, cilantro, and lime. (Some people have been known to put sour cream on this as well, it is really up to you! I suggest putting these garnishes in little bowls and having people deck out their own bowls.)
5. OPTIONAL STEP: While soup is simmering, you can add a chicken breast for about 10 minutes of the cook time. After 10 minutes, pull the chicken breast out, cool, and shred it. Either add the shredded chicken back into the soup or serve as another optional garnish.
