Description

Quick and easy soup perfect for the cold weather.

Ingredients

  • 6 whole Large Potatoes, Cubed
  • 2 whole Large Carrots, Chopped
  • 2 stalks Celery, Chopped
  • ½ pounds Bacon, Chopped
  • ½ whole Yellow Onion, Chopped
  • 1 pint Heavy Whipping Cream
  • ¼ sticks Butter
  • 1 Tablespoon Oregano (I Used Homemade Dried Oregano)
  • 1 teaspoon Salt/pepper To Taste
  • 2 cups Broccoli, Chopped
  • 1 cup Grated Cheese, I Used Colby Jack

Preparation

Put potatoes, carrots and celery in a large stock pot and barely cover with water. Cook until just tender. In a separate frying pan on low heat, cook bacon and onions until bacon is done but not crispy and onions are soft. Drain excess fat, or not. When the potatoes are done, add bacon/onion mix to the large pot. Pour in cream and add butter and oregano. Season with salt and pepper to taste. Add broccoli and simmer until broccoli is tender. Add cheese and stir until melted.

Perfect comfort food. I left out the broccoli (none available) and celery, and it was still great. I served this along with Olive Cheese Bread (PW site) for a different but great taste combo. My Hubby was very happy!

I made this minus the broccoli because the broccoli i had, seemed to go bad before i got to it. This was absolutely wonderful. I did use a bit less bacon and used Monterrey jack cheese.. it was wonderful!
